Ingredients

Cake Ingredients

250g pitted dates, chopped
5ml bicarbonate of soda
250ml boiling water
180g Stork Baking Margarine
375ml sugar
30ml golden syrup
2 eggs
15ml vanilla essence
780ml flour
15ml baking powder
125ml finely chopped nuts

Vanilla Cream Icing Ingredients

125g Stork Baking Margarine
375g icing sugar
25ml milk

Step by step method

  1. Place chopped dates and bicarbonate of soda in a bowl, pour over the boiling water. Leave to cool.
  2. Cream the Stork Bake, sugar and syrup until light and fluffy.
  3. Add one egg at a time, beating well after each addition. Beat in the vanilla essence.
  4. Stir in the flour, baking powder and nuts until thoroughly mixed.
  5. Lastly fold in the cooled date mixture.
  6. Spoon the mixture into a 23cm diameter greased and lined cake tin.
  7. Bake at 180°C for 50 - 60 minutes or until a skewer inserted into the centre comes out clean.
  8. Ice with vanilla cream icing, decorate with roses and dust with icing sugar.
  9. Beat the Stork Bake until soft and as white as possible.
  10. Gradually beat in half the icing sugar and half the milk.
  11. Beat in the remaining icing sugar and as much milk as needed to form an icing with a stiff but spreadable consistency.
