Ingredients

Cake Ingredients:

375g sugar
3 eggs
375ml cooking oil
560g flour
7.5ml bicarbonate of soda
0 Pinch of salt
7.5g ground cinnamon
7.5g ground nutmeg
2g mixed spice
7.5ml vanilla essence
300g pureed pie apples
0 ring pan

Icing Ingredients

75g Stork Baking Margarine
50g brown sugar
0 Icing sugar and water as needed to make a pourable icing
1 green apple, for the apple slices

Step by step method

  1. Preheat the oven to 180°C and grease a 23cm ring pan.
  2. Beat the eggs and sugar for 10 minutes.
  3. Add the oil to the egg mix and beat.
  4. Sift the dry ingredients and fold in.
  5. Lastly fold in the puréed apple and vanilla essence.
  6. Pour into the ring pan and bake for 50 - 60 minutes or until a skewer comes out clean.
  7. Turn onto a cooling rack to cool.
  8. Place the cooled cake onto a cake plate.
  9. Make the icing by melting the Stork Bake and stirring in the brown sugar.
  10. Add enough icing sugar and water to make a pourable icing that is golden in colour.
  11. Pour over the cake and decorate with the apple crisps.
  12. Dust with icing sugar.
  13. Slice the apple into thin rounds.
  14. Sprinkle the slices with icing sugar and place on an oven tray on baking paper.
  15. Dry at 120°C for 90 minutes.
