1 ¼ cup plain flour
1 ¼ cup toasted muesli
1 tsp cinnamon
1 tsp bicarbonate of soda
1/2 cup firmly packed brown sugar
1/2 cup bran
3/4 cup raisins
1 ½ cups buttermilk
100g Stork Baking Margarine, melted
1 egg, beaten lightly
1 tbsp honey

Step by step method

  1. Combine all ingredients in a large bowl and stir until just combined. Cover and refrigerate overnight.
  2. Preheat oven to 180ºC.
  3. Grease or line a 12 hole muffin tray or use paper cups.
  4. Divide the mixture between the 12 holes in the tray and bake for about 12 minutes.
  5. Stand muffins in the pan for a few minutes before removing and placing on a cooling rack.
