Ingredients

Main Ingredients

750ml self-raising flour
15ml baking powder
2ml salt
5ml ground cinnamon
5ml ground mixed spice
2ml ground cloves
2ml ground ginger
375ml castor sugar
375g Stork Baking Margarine, grated and softened
7 extra-large eggs
60ml milk
10ml vanilla essence
4 apples, cored and thinly sliced

Topping Ingredients

60ml light brown sugar
180ml cake flour
75g Stork Baking Margarine
50g macadamia nuts, coarsely chopped

Step by step method

  1. Preheat the oven to 180°C. Grease an oven roasting pan and line with baking paper. Grease again.
  2. Sift together the dry ingredients in a large bowl. Add the rest of the ingredients for the cake except the apple. Beat well until the batter is smooth (6 - 8 minutes).
  3. Turn the batter into the prepared tin and arrange the apple slices on top. Bake for 15 minutes.
  4. Mix the sugar and flour in a medium bowl.
  5. Rub in the Stork Bake with your fingertips until the mixture resembles breadcrumbs.
  6. Add the nuts and set aside.
  7. Scatter the topping over the cake and bake for another 20 - 25 minutes until a skewer inserted in the middle comes out clean.
  8. Remove from the oven and allow to cool.
  9. Cut the cake into squares and serve with whipped cream.
