Ingredients

Main Ingredients

500g cake flour
10ml baking powder
200g sugar
5ml vanilla essence
2ml salt
4drops drops lemon juice
1 Pinch of nutmeg
1 Pinch of cinnamon
1 Pinch of mixed spice
2 eggs, beaten well
200ml Stork Baking Margarine
250g smooth cottage cheese
300g dried fruit cake mix
100g raw almonds, roughly chopped
300g prepared marzipan

Topping Ingredients

50ml Stork Baking Margarine
1 Icing sugar to dust

Step by step method

  1. Spray a baking sheet with non-stick spray.
  2. In a cake mixer or large bowl, mix the cake flour and baking powder together. Make a well in the centre and add all the other ingredients except the cake mix, almonds and marzipan. Mix in the mixer or with your hands and then add cake mix and almonds. Mix to a smooth dough.
  3. Divide the dough in two.
  4. Place a sausage-shape piece of marzipan down the middle and fold the dough over to form a loaf. Repeat with the other dough.
  5. Place the loaves on a baking sheet and bake at 180°C for 60 minutes.
  6. When the loaves come out of the oven, brush with melted Stork Bake and dust with icing sugar.
